Tis' the season for a little .... detox. Heavy foods, lots of imbibing, and a constant parade of opportunities for the two makes for a sometimes great desire to detox. I get a lot of patients who ask about cleansing and detox, and many who have done some heavy duty liquid versions combined with colon cleanses, meditation, yoga, etc. This (what I am about to share) is not any of that. I don't want to get too into an analysis of how to detox and the different opinions on it, because there are many ways and I myself have not studied them all nor have I tried them all so I am hesitant to comment. I will say this, read up on whatever you are going to do and if you intend to cleanse while you are living your life as you normally do (actively), then I suggest not going overboard. If you can afford the time to go sit on a mountain and eat very little while doing very little, then by all means, go for it. Otherwise, your body needs the energy from food, it's really that simple. You can trigger all kinds of imbalances and go steps back instead of forward if you do not cleanse approrpriately. Most of the time, Spring is the ideal time to cleanse (not only your closets) your body, but sometimes, you need a boost right smack in the middle of winter.

Now that that is somewhat clear (I hope), we can get to the purpose of this posting: the mung bean liver cleanse. This is a wonderful way to clean out your liver which is the main organ responsible for processing toxins that enter your system. Your liver gets tired. If you are eating heavy foods and drinking more than usual, your liver will start to get overburdened and you may experience: sluggishness, bloating, gas, diarrhea, indigestion, depression, irregular menses, headaches, fits of anger, tense muscles, and believe it or not more symptoms than those! This cleanse is a great way to give your liver a break and get back on track. I'm not saying you should eat mung beans and then go back to hamburger-land the next day, you'll still need to ease up on your body afterwards, but this will help to give your liver a break.

At the base of this detox is the wonderful medicinal and food: the mung bean, or lu dou in Chinese. Mung beans are originally from India but long ago became a part of Chinese cuisine and medicine, that is why this is a cleanse which falls into both the Ayurvedic and Chinese medicine traditions. Mung beans are cooling, sweet, beneficial to the liver and gallbladder, and nourish yin (the fluids of the body). Usually, mung beans are used in the summertime to cool hot conditions and keep the body regulated, but they can also be used to cool hot conditions or liver-related toxicity during other times of the year. When I lived in China I loved having mung bean juice and ice cream in the summer! But winter is never a good time for this version of mung beans, you must eat them hot as they are still cooling and you don't want to overburden your digestive system with too much cold.

When you do this cleanse you want to do as follows to be effective: choose one whole day per week for a period of a month OR do it for one day, then take a week off, then do it for two days, then take a week off, then do it for three days, and so on and so forth until you've reached 5 days total straight. I will not lie, while the recipe is delicious, it is not easy to only eat mung beans and rice for even a day, especially if you love food and/or are surrounded by festive holiday dishes. That's why maybe the one day a week for a month is best for the majority of people at this time, but if you've got the stamina and willpower, go the whole nine yards! You can not eat anything else but the recipe below, you can only drink water and non-caffeinated teas. You can eat as much as the mung bean recipe as you want, but that is all. You can not smoke or drink alcohol (this would obviously counteract the benefits of a liver cleanse!). To increase the benefit of this further, I suggest you eat your last meal at 8 p.m. and do not eat again until 8 a.m. (you want a full 12 hours between your last and your first meal to completely give your body and liver a chance to rest). If you must eat at 9 p.m., then eat your breakfast at 9 a.m., and so on and so forth.

Conditions you would want to use this cleanse for: chronic fatigue (see a TCM practitioner for more guidance in this case), vertex or temporal headaches (ie. top of the head or side of the head), red eyes, indigestion, gas and bloating, acid reflux, irregular menses (also see a TCM practitioner for more guidance), chronic bronchitis, phlegm, depression, if you are undergoing chemotherapy (email me for more information on this please - but you would want to do it before chemo sessions for a day if possible), if you have cirrhosis or hepatitis C, if you feel angry and stuck, or if you just simply feel the need to clean the body out and give the liver a break.

Conditions you do NOT want to use this cleanse: DURING menstruation (avoid! it is too cold and will cause complications), if you have chronic diarrhea and difficulty digesting food (you may be having a "cold" condition in TCM and this would not be a good cleanse for you), if you start this cleanse and find it exacerbates any pain or discomfort in your body.

Suggestions and warnings: If you are going for a 2-3 day cleanse you may experience some headaches or dryness, this is often your body detoxing (especially for those accustomed to drinking caffeine or smoking cigarettes), so long as it does not persist beyond a day or two, this is within the normal range of a liver detox. Again, and I can not emphasize this enough, if you are very delicate or have a complex condition, please see a licensed TCM practitioner while you do this.

Ingredients and Cooking Instructions:
mung beans
rice (basmatic or jasmine work well, brown or white)
lemons or limes
cold pressed olive oil
sea salt
chile (dried, fresh, or sauce)

1. One cup of mung beans to 5 cups of water, add salt, bring to a boil and let it simmer. Depending on how soft you want your mung beans (taste to decide) it can take from 45 minutes to an hour and change for this to cook. I added a little cumin to my last batch to give it a little more warmth since mung beans are cold and it is winter.
2. Cook rice separately.
3. Plate rice, add beans on top, sprinkle olive oil generously, sprinkle sea salt, squeeze lemon or lime on top, and add chile flakes, chile sauce (I used sriracha as seen above), fresh chiles, or black pepper for those that find red chile too much.

*** A little side note here, a reader below has noted that the kitchari version of the mung bean cleanse can be done for longer periods of time and by adding garlic, onions, spices (cumin, tumeric, etc), ghee (clarified butter - very good for your digestive system) and vegetables to it. This is definitely the case if you want to make it a meal which you integrate more often into your culinary path and that is still incredibly healing and cleansing. However, if you want to clean your system out for a full day at a time you would want to be more strict and lean on the ingredients and stick to the five basic flavors : sour (lemon), salty (salt), spice (chile, cumin, tumeric or a combo), sweet (rice), bitter (mung beans). I have a bone to pick about cinnamon. How many of you really know what spice you have in your cupboards. Are you sure it really is cinnamon.

We in the U.S. are having the wool pulled over our eyes about cinnamon. What we commonly know in the U.S. as cinnamon is actually Cassia (cinnamomum aromaticum). It is a relative of true cinnamon, but not the real thing. The rest of the world uses true cinnamon (cinnamomum verum), in their cooking or baking, yet here we are sold something completely different.

As background, I first found out how much difference there was between these two spices when I lived in Guatemala. The cinnamon there tasted very different from what I knew growing up in Ohio; making things like an apple pie or apple crisp just tasted different. They were very good, but didnt taste like what had known. I chalked it up to differences in quality of product, or maybe my baking skill was inadequate. Any typical Guatemalan foods I ate or made with cinnamon tasted just fine of course, with nothing to compare.

That was back in the 1970s, and it wasnt until much later, when once again living in the U.S., I tried making a Guatemalan dish, Platanos en Mole (Plantains in Mole Sauce), using the cassia available. The dish just tasted wrong. I couldnt understand it. I had made this dish many times in Guatemala. I had a lot more cooking and baking skill by this time. What was wrong? I started checking into spices in general, with an eye to those things I knew were different, and discovered that we in the U.S. are being marketed a completely different product.

Cassia cinnamon is a very good spice, of course. I do not for a second propose we do away with it! What would our apple pies taste like without it. It is a wonderful spice, worthy of the space in our cupboards. However, I propose that true cinnamon have an equal place.

Cinnamon of either kind is the bark of the tree. The bark is peeled off and dried, curling into what are known as quills or ground into powder. This is where the similarity ends. Cassia quills are very thick curls, strong and sometimes even hard to break. It has a stronger taste, warmer and more potent. There is some very good quality cassia to be found these days, such as Korintje AA. A lovely spice to perk up anything you commonly make with cinnamon here.

For my cooking classes I always take both types of cinnamon: a high quality cassia quill and ground Korintje AA cassia, alongside true cinnamon quills and ground cinnamon. True cinnamon quills are curled and layered together in a tight roll, are very thin and easily crushed. The flavor is lighter and more delicate, with a somewhat lemony quality. I set the quills side by side and demonstrate the differences, first breaking a cassia quill, with the ensuing loud snap when it breaks. Then I show the cinnamon quill, layered together, and how very easily it breaks and crumbles. With the ground version of each side by side, I ask the class members to smell the two; first the cassia that is the most familiar, and then the cinnamon. The startled reactions when they realize exactly how big a difference exists between these two spices, is quite rewarding.

I would liken this before the U.S woke up and smelled really good Arabica coffee. Once we found out about good coffee, the tide turned. I believe this country is in the process of bringing true cinnamon into the light. It is found in most any Mexican grocery section these days. Good quality spice shops carry excellent quality cinnamon and also excellent quality cassia. If you want to make any ethnic food from anywhere else in the world, or just become familiar with a new flavor go for true cinnamon. Its worth the effort.

However, the daily consumption of chia seeds alone is not going to solve your prostate problems. The adherence to a strict prostate diet along with super prostate foods such as chia seeds may be your ticket to a healthier prostate.

A diet for a healthy prostate is a low-glycemic or anti-inflammation diet that contains foods for a healthy prostate such as lycopene (tomatoes), cayenne peppers, or chia seeds just to name a few. Due to the chia seeds effective absorption of liquid, they have a smooth gelatin texture when combined with water, milk or tea. There is a certain dress code for chefs that will reflect the level of their ethics and professionalism. Let us look at each item of clothing worn by a chef in order to fully grasp the implications of the dress code for chefs. The most popular symbol for people with culinary skills is the hat. It is more of a badge to the profession. Staying in the kitchen would require the chef to always have his or her hat on. Even if they are still studying to become chefs in the future, they should still don the hat. Usually white, the hat could either come with pleats or none at all. A rare chef hat is on that is black in color, which is offered to honorary cooks in this profession by fellow chefs.

Next is the necktie that is also white in color. The tie is commonly a big cloth made in a triangle shape, which they fold and tie loosely around their neck. One way to identify who the master chef or the apprentice is would be to take note of the way they wear their hat and necktie. The main chef would be the one wearing the tall chef hat, along with the necktie. The apprentice, on the other hand, will be wearing a smaller hat, called the chef cap. He would not be using a necktie, either.

The chef coat is the next important piece that should be worn when in the kitchen, which is also a clear symbol that represents the profession, but it mainly is worn as a protective garment. Although the fabric that the chef coat is made of is heavy, it is still breathable. It is colored white, has long sleeves and has white or black buttons. There are always boiling pots and sizzling pans in a busy kitchen. To protect his arms from splashes that come from the boiling pots, the sleeves have to be long. The sleeves should be kept straight. Do not roll them because that is deemed to be inappropriate.

Part of the outfit of a chef is the apron and torchon. They are supposed to be worn from the waist down. They are meant to be a matching pair. The protective apron is made from cloth. Its top is folded before it is wrapped around the waist. It drops at length long the front of the legs and is always knee-long and white in color with a two pockets. Along with the apron is the torchon, which is more of a kitchen towel. It is used to serve dishes even when they are still hot and any oil or food spillage would be easily dealt with using this piece of cloth.

To wrap the whole thing up, the chef should also wear the appropriate pair of slacks and shoes. The ideal kind of slacks has a fine, checked fabric print of black or blue color interweaved with white. A pair of black or dark blue trousers is also acceptable. Using other colors for your trousers as well as various patterns or prints is not allowed. For the kitchen, the shoes should be the slip-on type and they should be resistant to water, oil and slipping.

The chef's grooming also figures largely in the dress code for chefs. No wayward hair strands are allowed so the hair should be properly bound and kept under the hat. He should also limit the accessories he brings into the kitchen. Cleaning the hands and keeping the nails short is also important. No make-up would be preferable, although if you have to, keep it at a minimum.

The holidays aren't perfect in New Mexico without eating posolethe bowl of blessedness, a popular Southwestern stew originally made by the ancients in New Mexico and Mexico. The sacred blessings came from corn being the staple. So much so that the Corn Goddess, was the giver of life.

Prior to modern transportation and communication, posole was often the dish eaten for survival. Even though it is little known, blue corn has 100% nutritionall the vitamins, minerals and essential amino acids for good health.

Posole is made from dried whole kernels of corn and is the Mother process for all corn in Mexican food products made from masa. The characteristic flavor of all native corn dishes made from whole or ground corn such as tortillas, tamales and tostados are made from posole. Posole is always the first process, the corn is first made into posole and then ground into masaground finely for tortillas and coarsely for tamales.

The ancients discovered that if they soaked the corn in a mixture of ground limestone and water and allowed it to soak for several days before draining it and drying it, that the corn was well preserved and would remain fresh tasting and vermin free for a few yearsoften up to seven years.

The ancients believed in the rule of seven--that every seven years, there is a great crop. They were taught that you cannot plan on having a great crop every year. So the bountiful crops had to be preserved. It was this necessity that created the evolution of posole. In New Mexico, it is too far north to easily get ground limestone, so they used ashes from wood fires to cover the corn for a week or so to "cure" the corn.

Posole has a lot going for it. If properly made, it is delicious and satisfying. Also, it is very economical. A pound of dried posole feeds 15 to 16 people as a main dish. With all these benefits, it is not surprising that it became the dish for celebrations or feasts to commemorate generally joyous occasions, such as weddings, births, corn and rain dances and so forth.

To cook posole, one important fact is that the posole is reconstituted by cooking it in water with no seasonings added. (Seasonings, especially salt, will inhibit the kernels from popping open and exposing the starchy, soft center.) The posole should be allowed to cook uncovered with frequent additions of water and only occasional stirring . Once the kernels have burst, it can be seasoned and finished or it can be stored for a few days before finishing. Or, it can be frozen for up to six months or it can be ground for the masa for tamales. (Most home grinders or food processors will not grind the cooked posole finely enough for tortillas.)

Following is my favorite recipe for Traditional Posole. Vegetarian, escabeche or pickled posole and many variations are possible.

POSOLE
Dried Corn with Pork and Red Chiles
You may serve this either as a side dish or main dish. I like to layer toppings such as fresh shredded cabbage, fresh lime juice and fresh chopped onion.

Yield: 15 to 16 servings

1 pound dried posole
1 quart water, or more
2 pounds pork, steak or roast, cut into " cubes
1 Tablespoon salt or to taste
2 garlic cloves, minced
pinch of Mexican oregano
1 Tablespoon cumin, or to taste
cup caribe chile or to taste

1.Simmer the posole in unseasoned water until it becomes soft and the kernels have burst open; it usually requires 1-1/2 to 2 hours.

2.Brown the pork in a cold, well-seasoned frying pan; adding no fat or oil to the pan. Saute until very browned, then add to the posole. Deglaze the frying pan with 1 cup water, stirring to loosen the brownies sticking to the pan. Also add to the posole.

3.Add remaining ingredients, using one-half the cumin and cook the stew for 1 or more hours, to blend the flavors. Just before serving, add the remaining half of cumin. Taste and adjust the seasonings. Ideally, this dish should be started the morning before it is to be served, to allow the flavors to develop.

Because values touch the core of who we are, why we work, and what we want to get out of our work. I'll be honest - I'm a little intimidated by Southern cuisine. Each area of the South has its own unique flavors and aromas, ingredients and methods that set it apart from the others. And being but a humble suburban Northerner, the idea of delving into the goings on of the Southern kitchen is all out frightening.

However, being the go-getter that I am, I've decided to tackle southern cuisine one region at a time - and where better to start than Louisiana? A state with a fascinatingly rich culture and history, there are two main genres of cooking that have emerged: Creole and Cajun. And although the mainstream media have commercialized the idea of Cajun to mean anything that is spicy (i.e. McDonald's Spicy Cajun McChicken), these two cuisines each have their own methods, ingredients and histories that produce much more complex flavors than simply "spicy."

Creole

History
One of the main distinctions between Creole and Cajun cuisine is the origin of the people who created them. Creole cuisine was born from European aristocrats who moved to New Orleans in the late 1600s. Melding lifestyles as well as culinary influences, a new culture was born. These people became the upper-class of the city and their descendants can still be found in the French Quarter of New Orleans today.

The word Creole comes from the Spanish word criallo meaning a mixture of cultures or colors (as in the word Crayola) and from the Latin creare meaning to create (as in a new race). The mix of cultures included Native Americans, French, Spanish, English, African American, German and Italian.

Cuisine
Because the Creole were people of privilege, the ingredients in their cuisine reflect a more sophisticated and expensive palate. The veritable melting pot that was merging in New Orleans during the end of the 17th Century created a fusion of foods. Dishes that we now recognize to be uniquely Creole are each contributions from different European cultures and truly illustrate the evolution of the dishes.

German influence brought sausage and dairy
Italians introduced ideas of pastry and ice cream

Cajun

History
The history of the Cajun people is almost the exact opposite of the Creole, whose lives were filled with privilege (and private chefs). The people who became known as Cajuns were exiled French refugees who immigrated to south Louisiana from Acadia, Nova Scotia in the 18th Century. Because they were immigrants forced from their homeland, their cuisine - and their livelihood - depended on their survival. The Acadians (who were later known as Cajuns) learned to live off the land by incorporating fish, shellfish and wild game into their diets.

Cuisine
Born in the bayous and swamplands of Louisiana, Cajun cuisine is one of natural resources, efficiency and survival. The phrase "table in the wilderness" is often used when referring to original Cajun cooking because the Acadians had to adapt to the indigenous foods of the area. A common misconception is that Cajun food is always spicy. On the contrary, Cajun food is well-seasoned, but did not gain a reputation for heat until the 1970s when the "blackening" technique became popular. Cajun cuisine originated from three major influences:

Natural Resources - Native Americans taught the Acadian immigrants to utilize their resources by cooking with products found in swamps, bayous, lakes, rivers and woods.
One Pot Meals - In an effort to conserve energy and resources, meals that could be cooked in a single pot made everyone's life easier. Dishes like jambalaya, grillads, stews, fricassees and gumbos all lent themselves to this form of preparation.
German Sausages - Another outside influence, Cajuns quickly learned to use the sausage to add flavor and spice to their cooking. Sausages like andouille (pronounced en-DOO- wee), smoked sausage, boudin and chaudin are all found in Cajun cooking.

Aside from the unique dishes of each culture, Cajun and Creole cuisine share many of the same dishes. Both utilize (and swear by) what chefs call the "Holy Trinity" of southern cooking: green peppers, onions and celery. Here is a great veggie dish that takes no time at all to prepare. Made with a bed of potatoes this dish is hearty and very filling. I made this the other night for a group of people and they raved about it REALLY. Actually, I was kind of surprised because this dish is so simple to make. Full of all the nutrition of potatoes and bell peppers this dish will do the body good. And the rosemary is amazing, it brings this dish alive and full of flavor. Ingredient:

3 - Pounds of Organic Red Potatoes - Sliced and Boiled Until Tender

3 - Large Organic Green Bell Peppers - Cut into Large Pieces

2 - Large Organic Red Bell Peppers - Cut into Large Pieces

1 - Head of Organic Cauliflower - Cut into Large Pieces

1 - Large Organic Organic Chayote - Cut into Large Pieces

2 - Large Organic Yellow Onions - Cut into Large Pieces

4 - Organic Veggie and Salt-Free Bouillon Cubes
12 - Oz of Organic Black Olives

12 - Cloves of Organic Garlic Minced

3 - Tablespoons of Fresh or Dried Organic Rosemary

1/4 to 1/3 - Teaspoon of Organic Stevia Powder - or a touch of honey can be used instead this adds a little sweetness to the veggies and offsets the rosemary flavor.

1 or 2 - Teaspoons of Organic Cornstarch or Arrow Root Powder

1 - Large Organic Tomato - Sliced for Garnish

Cook the potatoes ahead of time. Sometimes I even cook the potatoes the day before. Then in a large pot with just a little water at the bottom add all the rest of the ingredients. Braise turning constantly until a nice color is attained and everything is cooked through. This will take some time, but keep turning you dont want those veggies to burn.

Then, line the bottom of a 12 x 16-inch casserole dish with sliced potatoes.

Next, pour on the rosemary braised veggies and garnish with a few slices of tomato.

Cover with foil and pop into a 425-degree oven for 90 minutes. When you remove the veggies from the oven there will be lots of veggie stock at the bottom of the baking dish. Pour this stock out and thicken with a couple teaspoons of cornstarch or arrowroot and heat on the stove until the stock thickens up.

Next, pour the thickened stock over the veggies in the casserole dish.

(Optional) Add some Nutrient Yeast Powder on Top for a little bit of cheesy flavor and extra nutrition.

Let Cool and Serve

Serves 12 to 15 people or 6 hungry guys.
